HUN Az egyik kedvenc thai fogásom a zöld papaja saláta lett. Persze nem én vagyok az egyetlen, aki így érez. A thai hölgyek körében is ez a legnépszerűbb étel. Az itteni piacon 35-40 baht az ára, mintegy 250-300 forint és pár perc alatt frissen készítik – ahogy azt alább a videó is mutatja.

Otthon kihívás lehet jó zöld papját beszerezni, de nem lehetetlen (a Culinarisban állítólag van). Aki hozzá tud jutni, az alábbi recept alapján kipróbálhatja milyen is ez… aki nem, annak ajánlom Mautner Zsófi újragondolt változatát, ami papaja helyett zöldalmával készül. Őt ismerve, ez lehet hogy jobb, mint az eredeti.

ENG One of my favourite thai dishes (which also happens to be one of the most popular dishes in the country) is the green papaya salad. Here it costs just over a dollar and available in every market: well practiced hands make it in about 5 minutes. You can see that below on the video.

Getting good papaya might be a challenge in Europe, but if you can find it, I doubt it can have a better fate than being transformed into this delicious salad.

Hozzávalók:

  • 5 koktélparadicsom
  • 2 kis (thai) csili (elhagyható)
  • 1 1/2 evőkanál halszósz (vegetáriánusoknak szójaszósz)
  • 1 cikk fokhagyma
  • 6 szál zöldbab
  • 1/2 kis répa
  • 2 bögrényi gyalult/reszelt zöldp papaja
  • 3/4 lime
  • 1 1/2 pálmacukor (vagy bármilyen elérhető édesítő)
  • 2 evőkanál pörkölt mogyoró (sózatlan)
  • 1 evőkanál szárított tengeri rák (elhagyható)

A zöld papaja valójában egy éretlen papaja. Az érett gyümölcs sárga, édeskés, puha húsa helyett az éretlen papaja ropogós, belül fehér színű és semleges íze van. Mindezek miatt tökéletes saláta alap.

Thaiföldön a papajasalátát, vagy itteni nevén a som-tumot (ส้มตำ) egy nagy cserép mozsárban készítik. Otthon ez helyettesíthető turmixgéppel (a csili és a fokhagyma apróra vágására), a zöldek textúráját pedig fel lehet lazítani a nagyi húskloffolójával.

Tálalható magában, vagy tetszőleges rizskörettel.

Elkészítés:

  1. Reszeld/gyaluld le a zöld papaját és a répát. A zöld papját először meg kell hámozni, és úgy gyalulni, hogy a belső, magos része már ne kerüljön a salátába.
  2. Zúzd össze, vagy darabold fel a mogyorót, majd tedd félre.
  3. Vágd a zöldbabot 2-3 centis darabokra.
  4. Put the chilies and peeled garlic into a mortar and pound them gently. (Do not a puree it.)
  5. Add the green beans and give them a bit of pounding as well. This will make them more tender.
  6. (If you use dried shrimps, this is when you add them and pound those a bit as well.)
  7. Mix in half of the peanuts.
  8. Add the shredded papaya and carrot continue bashing lightly, just enough so the mixture soaks up the flavours. Use a spoon to keep turning around the mixture.
  9. Mix in the lime, palm sugar and fish sauce. And turn and lightly bash the vegetables again to soak in the taste.
  10. Add the cherry tomatoes, mix well and serve with the remaining peanuts on top.

 
Megjegyzések:

  • A halszósz/szójaszósz (sós) – lime (savanyú) – cukor (édes) arányát igazítsd az ízlésednek megfelelően. Hasonlóan a fokhagyma és a csili mennyiségével. (Érdemes megjegyezni, hogy Thaiföldön fiatal, pici fokhagymát használnak, aminek nincs erős íze és puhább is, mint a nálunk megszokott.)
  • Az otthon kapható rákok gyakorta előre sózottak. Érdemes csökkenteni a halszósz mennyiségét, ha sós rákot teszel a saliba.
  • Ezt nem próbáltam, de állítólag a zöld papaja helyett a karórépa vagy a vajrépa is jó alap a salátához.

Ingredients:

  • 5 Cherry Tomatoes
  • 2 chili peppers (optional)
  • 1 1/2 tablespoons fish sauce or soy sauce
  • 1 clove garlic
  • 6 green beans
  • 1/2 small carrot
  • 2 cups shredded green papaya
  • 3/4 lime
  • 1 1/2 tablespoons Palm Sugar (or any other kind of sugar)
  • 2 tablespoons toasted peanuts (unsalted)
  • 1 tablespoon dried shrimp (optional)

The green papaya is an immature papaya that’s not ripe yet. Unlike the soft yellow ripe papayas, this has white, crunchy flesh and a neutral flavour.

In Thailand, the green papaya salad (ส้มตำ) is made using a mortar, a pestle and a spatula. But you can make the paste (chilli+garlic) in a food processor and just mix with the rest. To get the greens more tender, you can use a mallet.

Serve it by itself, or with your preferred style of rice.

  5. Add the green beans and give them a bit of pounding as well. This will make them more tender.
  6. (If you use dried shrimps, this is when you add them and pound those a bit as well.)
  7. Mix in half of the peanuts.

Notes:

  • Adjust the fish/soy sauce (salty) – lime (sour) – sugar (sweet) ratio to your own taste. Same with the number of chilly and garlic used.
  • If the shrimps are salty, use a bit less fish sauce.
  • Apparently, instead of green papaya, it also works with swede.
